How this one fails
These are mechanically simpler than their price suggests and that is good news at repair time — a vaulted oven with a gas burner and a thermostat has fewer things in it to fail than a modern electronic range. The care required is in the finish rather than the mechanism. Brass, enamel and hand-applied colour do not forgive a careless tool, and most of the caution on a La Cornue call is about protecting what is not broken.
